Séverine Sagnet, chef de cuisine
Séverine followed classical French chef training and then gained invaluable experience with several master chefs like Firmin Arambide, Michel Troisgros and Christian Etienne. It was after having worked for these great chefs that she decided to go and work in England and Ireland to perfect her English. Her interest in management and the hotel industry next led her to study for a diploma in hotel management, which brought her to Avignon. She alternated her studies with working at La Bastide Rose boutique hotel for Poppy Salinger, the widow of Pierre Salinger. It was there that Séverine’s warm relationship with Provence’s wonderful international clientele first began.
She has successfully combined her talents for cooking and management by directing the cooking school of La Mirande. For the last 10 years, she has been teaching cooking classes and preparing private meals for “La Table Haute”. She has become the ideal ambassador of Provencal gastronomy, by uniting local produce and wines with visits to the market and cooking classes for her local and international clients.
