Chef
Michele Donvito
A native of Naples, Michele Donvito trained under three-Michelin-starred chefs in Italy before moving to France, where he spent four years working alongside Alexandre Mazzia in Marseille—rising from chef de partie to executive chef. In 2026, at the age of 32, he took the helm at La Mirande.
Three Plates,
a story
True to the generosity of Mediterranean cuisine, the chef crafts his menus as triptychs—three dishes that complement one another to tell a story. Blending Provençal terroir, French tradition, and transalpine memories, his cuisine—as thoughtful as it is instinctive—transports diners, with juices and sauces taking center stage.
